Shrimps with pastis and Kampot pepper

Pastis shrimp squid

Ingredients :
- shrimps
- squids head
- pastis
- Enoki mushroom
- coriander
- shallot
- tumeric
- fresh ginger
- lemongrass
- small cauliflower pak choi
- lime
- fish fumet
- mint
- kampot salt flower
- kampot fresh green pepper
- kampot white pepper
- olive oil

Sautéed shrimps and squid with mix (shallot, lemon grass, fresh ginger, turmeric, fresh green pepper) then the pak choi. flambé with Pastis then fish fumet. Outside the fire, in the hot cooking broth are added enoki mushroom, coriander, mint and lime schrub. In this dish I’m not using the fresh green pepper for seasoning, more like an ingredient. But just 6-7 grains, it still strong. The white pepper for seasoning, work perfectly with fish and seafood.
